Tangy Tempeh with Green Beans and Peanut Sauce



Well tomorrow morning (7.30am) I go into hospital to have all 4 wisdom teeth out. Tonight I am having a bunch of friends around to our unit for a sort of "last supper" of sorts. I am going to be doing a bit of an indian feast so I am a little excited.

Anyway - what I really wanted to blog about is an awesome tempeh recipe. Tempeh is quite expensive around here and so I very rarely buy it - and when I do buy it I usually make the same recipe - because I know that it is nice and I don't want to waste good tempeh on a bad recipe.

Anyway I had some tempeh, but none of the other ingredients in my other good tempeh recipe. So I went on a bit of a hunt. I was almost going to make tempeh bacon from VWaV - but I wanted to make a dinner that wasn't too shabby (the amount of potatoes we have consumed in the last week in the form of fries, mashed potatoes and potato salad is quite disgusting).

I found this recipe on the net. I changed it slightly so I will put in my changes - but I am sure that the original recipe would be just as nice. This served 2 very hungry people and it will be something that I will be making again because it was so quick and easy!

Tangy Tempeh and Beans

1 block of tempeh (mine was 250g) - cubed
2 tsp olive oil
4tbsp soy sauce
2 tbsp apple cider vinegar
2 tbsp apple juice concentrate
1/4 cup water
1 clove garlic - minced
1 1/2 cups green beans - sliced into 3cm lengths (or any other green vegetable you fancy - broccoli would be particularly good).

1/2 cup peanut butter (I used one that is solely made from ground peanuts)
1 tbsp agave syrup
1 tbsp soy sauce
1 tbsp apple cider vinegar
1/2 tsp fresh ginger - minced
1 cloves garlic - minced
1/4 - 1/2 cup hot water (depending how runny you want your sauce - I used closer to 1/2 cup)
salt and pepper to taste

Mix the oil, soy sauce, vinegar, concentrate, water and garlic together and pour over tempeh cubes that are in a medium sized saucepan and marinate for at least an hour - flip tempeh occasionally.

Put saucepan on the stove and bring the marinade to the boil. Simmer, covered, over low heat, stirring occasionally. After 10 minutes add the green beans and continue to simmer for another 5 minutes. Uncover and simmer until the tempeh is almost dry.

Place remaining ingredients in a blender and blend until smooth and creamy, adjust the amount of water and salt and pepper to taste.

Place tempeh and beans over a bed of rice and then pour peanut sauce over the tempeh. Enjoy!

The "I have to make biscuits and be out the door in half an hour" recipe


Sorry for the long title. It sets the scene beautifully though. Apart from my US friends might need biscuits to be translated to cookies.

There I was last night happily thinking that I was going to spend the evening just chilling and watch a movie with Nat, when I get a txt from a friend saying that she was picking me up in 1/2 an hour to go to dinner at another friend's house... I TOTALLY forgot about the dinner and I had said I would bring some post dinner munchies.

Well - with there being nothing in our cupboards that was able to be taken (well there were plain crackers but I didn't have any dip) - I realised that I was going to have to bake something... and something really easy. One of the people going to the party has an intolerance to sugar - so I also had to make it sugar free.

I did a quick search and found this recipe here. It was so simple. I made a few substitutions - I used agave instead of sugar and I also used coconut oil and white spelt flour.

They came out really well. This is the second batch (that I made so that nat would have some for lunches at work) and they got a little burnt because I was running around getting ready and not paying too much attention.

I couldn't believe how good they were for how simple the recipe was. It was a little too sweet for me but everyone else thought it was just right.

[VeganMoFo #4] Cooking up some kickarse VWaV cookies

Nat is a tour guide. Now that the guiding season has started Nat is sometimes away for days at a time. He has just got a job with a day tour company which is much cooler!! As his next trip is for backpackers they either have to take their meals or buy them. Because the guests will all buy yummy non-vegan sweets I thought that I would make nat something that he could eat and not feel deprived.



I recently got Vegan with a Vengeance and nat asked if I could bake the Big Giantoid Peanut Butter Oatmeal Cookies. Well I baked them - but I made them normal cookie size. This meant that I made HEAPS (I forgot to check how many cookies the recipe made)

I am very into coconut oil at the moment and so I substituted it for canola oil. I also didn't have any vanilla soymilk (so I added a little bit extra vanilla essence) and I used half unbleached and half wholemeal spelt flour instead of the all purpose flour (I don't actually know what all purpose flour is - I am guessing just plain flour??). I baked them for 10 mins at 175°C.

Nat loves these cookies and, as they taste FANTASTIC, I am happy too. My only difficulty is keeping them away from nat so that there are some left for him to take away on his trip!!

Two of our favourite veggies in one dish!!

My husband and I were rudely awoken this morning (at about 5am) to hear someone trying to get into our unit with a key. When my husband went to see what was going on they sheepishly realised that they had the wrong unit. I wasn't too impressed - I mean there are only 8 units are in our block. Anyway - from there it was a busy day for both of us. My partner worked from 9am to 6pm and I had uni until 1pm and then was home writing an assignment for the afternoon. For dinner because I know that nat is SO hungry after a full day of work (and riding his bike home up a long hill). Sweet potato is one of nat's favourite vegetables and I had a few eggplants to use up (Eggplant is one of my favourite vegetables) so I was incredibly excited when I found a recipe from Ashbury's Aubergines. I followed the recipe pretty well but did alter it a little. I have put my revisions below. I served this dish with an easy chickpea and silver beet side dish.



Sweet Potato Stuffed Eggplant

Stuffed Eggplant

2 medium eggplants
2 tablespoons soy sauce
oil
3 medium sweet potatoes, peeled and diced
1 large onion, chopped
3 garlic cloves, minced
1 large capsicum, diced

Spicy Peanut Sauce

  • oil
  • 1 large onion, chopped
  • 2 tablespoons grated fresh ginger root
  • 1/2 teaspoon chili paste, more to taste
  • 3/4 cup natural unsalted crunchy peanut butter
  • 2 tablespoons soy sauce
  • 1-2 tablespoons agave syrup
  • 2 tablespoons cider vinegar
  • 1 tablespoon tomato paste
  • 2 cups water
  • salt to taste

  1. Preheat oven to 175ºC. Spray a baking pan with oil.
  2. Cut the eggplants in half lengthwise, brush the cut sides with soy sauce, and lay them flesh side up in the pan. Add 1/2 cup of water to the pan and cover with foil. Bake until tender, about 30 minutes.
  3. Steam the sweet potatoes for about 10 minutes, until just tender.
  4. In a non-stick fry pan, sauté the onions and garlic for 5 minutes, until the onions are soft. Add the capsicum and cook until just tender, about 5 minutes. Add the sweet potatoes to the skillet. Season with salt and pepper to taste. Stir, cover, and set the filling aside.
  5. Peanut Sauce: saute onions in a saucepan for 5 minutes. Add the ginger, chili paste and saute for another 2 minutes. Add the remaining ingredients and stir thoroughly until the peanut butter has melted and mixed with the remaining ingredients.
  6. When the eggplants are done - remove them from the oven and scoop out the centre (leaving a little flesh attached to the skin), chop the removed flesh and add it to the sweet potato mixture.
  7. Place the sweet potato mixture in the eggplant shells and return the eggplants to the oven and cook for 15mins.
  8. Remove from the oven and top with the peanut sauce and serve.
Sauteed chickpeas and silver beet
  • 1 medium onion
  • 4 cloves garlic, crushed
  • 400g chickpeas, (either from a can or home cooked)
  • 500g fresh silver beet, washed, stems removed and chopped. (or spinach)
  • salt and pepper to taste.
  1. Saute onion and garlic with either water or oil in a non-stick pan until onion is browned, about 5 mins
  2. Add chickpeas and silver beet. Cover and heat until silver beet is wilted.
  3. When silver beet is done, season with salt and pepper and serve immediately.
