Easy Falafel Salad


I was in Canberra for work last week and returned quite sick. I think it was a combination of being in air-conditioning all day and night and also sitting next to sick people in my training courses. This week and next week Nat is away for work so don't expect to see to much creation on my blog.

The day I left for Canberra it was quite warm and Nat and I felt like salad for lunch.
We had some leftover falafel from dinner the night before and so we had Tassie Oak Leaf Lettuce, Tassie Tomatoes, Cucumber, red onion and falafel with tahini drizzled over the top. It was so good and refreshing - I think I will make it again as soon as the weather warms up again.

The falafel was from Vegan With a Vengence. This recipe is AWESOME!! I think I know it off by heart now.

So sorry to hear that you are sick! I hope you feel much better soon. Your salad looks very good! I haven't tried that falafel recipe and should probably get to it!

Great to know your parents distribute Loving Earth! I was going to look into it for Sydney but it seems to be readily avail. already :)

Your falafel looks delicious. I have actually been craving falafel like crazy this week but I can't find my favorite recipe. I will check it out in Vegan with a Vengence - thank you!

I lived in Detroit for about 3&1/2 years. And if you do not know, Detroit is a mecca for Middle Eastern folks.

And to this day, If I had only one ethnic dish to eat, it would be Middle Eastern food.
